Allergen management is a key element of food safety.

In this context, gluten and lactose deserve particular attention due to the widespread prevalence of celiac disease and lactose intolerance, as well as the complexity of the matrices in which they can be found. Analytical verification and the correct declaration of their absence—or presence in trace amounts—are essential to ensure compliance with regulatory requirements (EU Reg. 828/2014 and EU Reg. 1169/2011) and to protect the health of sensitive consumers.

In this presentation, R-Biopharm delivers an overview of the main analytical methods for detecting and quantifying gluten and lactose, including lateral flow tests, ELISA assays (sandwich and competitive), and enzymatic methods. A decision-making framework will also be proposed to support selecting the most suitable technique based on the matrix analyzed, the required response type (qualitative or quantitative), and the available instrumentation. For each approach, the presentation will cover advantages, sensitivity, selectivity, and limits of detection and quantification (LOD/LOQ), with a special focus on the role of automation in improving speed, accuracy, and result traceability.
